Nicola is the first Bachiche Cuisine restaurant in the United States – The term “Bachiche” emerged in the mid-19th century, when Italian families settled along Peru’s coast. Over time, as their culinary heritage merged effortlessly with Peru’s native ingredients — ají peppers, potatoes, corn, and seafood — creating a new identity that was neither purely Italian nor purely Peruvian, but entirely its own, ‘Bachiche Cuisine’.
